Chilli & Lime Jams#

My first time making Chilli jam I overcooked it, included too little ginger, and too much sugar While it had a decent flavour, the sugar was overpowering and boiling for too long resulted in a jam that once set became very hard.

It would probably work well as a glaze on some ham, so I’ve kept a jar but emptied the rest.

A couple days later I reattempted it with a reduced amount of sugar, increased ginger and didn’t boil it for as long.

This was a lot more runny than the first, better flavour with the less sugar, but definitely too much ginger.

Next time I’ll significantly reduce the amount of ginger & increase the amount of lime juice.
